I cooked the veggies and got everything ready to go the night before, and then just left the slow cooker on all day while I was at work. It was perfect for a cold winter day! We will definitely be making this again.]]></description>

I even subbed chicken breast for the carnitas (which I just didn&#039;t have any pork and will try because I&#039;m sure its really good!). It had a lot of flavor and tasted just like traditional posole I&#039;ve had in the past but not as greasy. I also added fresh cilantro and fresh squeezed lime upon serving which is how I&#039;ve always had it and it was AWESOME! I would also recommend yellow or golden hominy because it just looks so much more appetizing than the white! ENJOY!]]></description>
