I think I’ve made it 10 times. I’ve added zucchini or yellow squash if I have them. Also whole wheat pasta or orzo. A couple times I’ve used the precooked bacon and just added it at the end. Delicious!

I used center cut bacon, so I needed a little olive oil to brown the onions and celery. Other than needing a little salt it was perfect. My kids loved it. I think I will also try to sneak in a little fresh spinach next time.

It took me over a week to assemble the ingredients (I ended up feeding a pound of bacon that didn’t taste quite right to our dog and cats.). Once I got my act together the soup went together quickly and tasted great. I added about a clove of garlic, but followed your recipe pretty closely. It’s going into the regular rotation.
