Here in the Hampton Roads area of Virginia, we had a few snow storms back to back this weekend – over three inches, which for here is a LOT (I know, we’re weenies when it comes to snow)!! Anyway, I prepared this Sunday afternoon and it was so delicious and light. I served it with homemade sweet potato biscuits and OH MY!!!! We’ll be grazing all evening!
