Wow! Wow-weee wow wow! This soup was AWESOME! Everybody in the family (7 of us) loved it. I made a double batch and it was .... GONE. I left out the carrots and peas because some family members don't like them, used leftover rotisserie chicken instead of the breasts, and added corn. The rest was exactly as the recipe called for including the arborio rice. This one will definitely go in the file with the family favorites!

We loved this soup. So much so that husband asked that I make a batch just for his lunches next week. I leaned on Costco for the already cooked chicken breast tenders (diced a bit smaller) and their already-cooked-brown rice-bowls in place of the arborio rice as I just can't seem to get arborio to ever work for me. I also diced up baby carrots so they are smaller than the coins big carrots produce. (I have family members that are picky about texture. Have to get veggies in them any way I can right?) Good flavors, hearty texture. Add some fresh sliced bread and it's a great meal. Thanks BluebonnetGal!
