I added some Merlot (just because I was drinking a glass while I cooked!) and I also love the idea of adding fresh baby spinach. I will have to do that next time, too! My kids even liked this (ages 2 and 5) even though they are not crazy about tomatoes.

I even threw in some leftovers from the fridge I needed to use up; some chopped onions, fresh garlic (browned the with the beef), and about a half a bag of fresh spinach (always looking for ways to add more veggies to my family’s diet) It is yummy! Now I need to go find some crusty bread…
