Made this soup last night..It was just what I was looking for to make on a week night. It was very easy and so delicious! The only alteration was that I left out the pasta (we’re watching our carbs). I had it again for lunch today – yum! Very easy, very flavorful – thank you for sharing!

Yummy! Changed a few things – since I dislike celery I left it out all together,substituted dried minced onions instead of fresh, and added one beef bouillon cube for a bit more flavor. It was so good! Makes a lot though!

This turned out GREAT! I tripled the recipe for a large group and made it with turkey broth and ground turkey…HUGE hit.

LOVED this soup! My first time to make a Minestrone soup, so I was delighted to find such a delicious recipe!! Thanks for posting. My husband and daughter loved it too! Definitely going on my list of favorite recipes.
