		<description><![CDATA[Great soup!  I&#039;ve made it several times.  I cut down on the red pepper flakes because we don&#039;t like much heat.  I couldn&#039;t get escarole at the store, so I substituted kale once and mustard greens another time.  Probably would work with baby spinach as well.  I&#039;ve also used turkey sausage and kielbasa.  I&#039;ve been asked for the recipe after making it for others, so that&#039;s affirmation enough for me.]]></description>

		<description><![CDATA[I was 16 and Mom sent me to the store for ingredients- she was making Escarole &amp; Beans. No problem, except we say it like &#039;ShhKADOLE&#039;  - so there I am, all sweetly innocent asking the produce guy where he keeps his &#039;shhkadole&#039; - I still remember the blank helpless stare. &#039;The what?!?&#039; &#039;SHHKADOLE- it&#039;s prolly spelled with an S. I don&#039;t see it on the signs.&#039; - I went home with just beans.  The family laughed for years.
