Flavor was crazy good. I had low expectations of myself, have always been intimidated by the roux on these dishes, but got it done and it came out amazing. This is a huge amount of food, probably feeds a party better than a dinner. Everything was perfect. Heat, taste, spices, meats, veggies. I thought it was perfect. My new favorite recipe hands down.
