It was 5pm and all I had was some left over ham in the fridge. Found this recipe, whipped it up in a half hour and was thrilled! Fantastic flavor, even my young kids loved it!! I also added some celery and a few pinches of parsley (and I used fat-free 1/2 & 1/2 for less calories!). Delish!

I made a big pot of rice in the rice cooker so that one day we could have this soup and the next day I could throw together a Thai Chicken recipe. The very best thing about this recipe is that it can be thrown together in minutes when the rice is precooked.
