I had a difficult time blending this with the immersion blender so I ended up putting it in a regular blender and that worked fine. I ran out of half-and-half and my only option was heavy cream, which gave this soup a very thick consistency. It almost could have worked as a “puree” type base/side to a meat dish, but we still ate it as a soup and it was very tasty! Maybe next time I’ll try it as a puree.
