Very easy and very good! I put in frozen chicken breasts (because my brain sometimes forgets about the whole planning ahead thing) and it came out perfect! Added a can of enchilada sauce for more flavor, used Ro-Tel and cannellini beans since I had them on hand, and played with the spices a bit. So easy to tweak this to your own tastes. Thanks for the recipe!

Oh, wow. This is my new favorite chicken tortilla soup, and it's a bonus that it's made in the crockpot! The fact that it has multiple ingredients is not a big deal since more than half of them are spices. The thing that took the most time was preparing the jalapeno peppers, so overall, this was a relatively easy dish to prepare. The chicken turned out perfectly and not rubbery or dry, and it was literally a flavor explosion. Thanks for sharing this great recipe!!!
