I made the broth the previous day, -mainly so I could easily skim off the fat, and by doing so, it made the soup very easy and quick to put together the following day. I had to cook it a little longer to get the rice done, and I noticed that the leftovers really thickened up because the wild rice soaked up a lot of the broth. I suggest having some extra broth around just in case. I love this recipe and have added it to my ‘keeper’ file. Thank you so much!
