This is a great tortilla soup recipe! I used leftover turkey from thanksgiving instead of cooking my own chicken.
My husband likes his soups a little thicker so I used a little less chicken broth and thickened it a little with some mashed beans and flour. We also didn't have any monterey jack - and cheddar worked just fine (although I would definitely get a mexican cheese next time!) This is a really good and versatile recipe. Big hit!
