It has more a hint of something that makes you say, “I think this might have curry”, but I like that it’s not overpowering. I was expecting a more vibrant carroty taste, and do think 40 minutes was more than needed and kind of boiled the life out of the carrots. I’d make it again, but reduce the cooking time until the carrots and potatoes were fork-tender.
