The night before (I was working a night shift) I had step-daughter and husband chop up the fixin’s. They put them in containers and left them in the fridge for me for morning. I dumped all the ingredients into the crock pot.

I used sweet basil rather than oregano, but other than that, stuck to the recipe.

We had rolls and a salad with the soup and it was declared delicious by all!

I definately will make this again and freeze some. When I make the soup to freeze I wont make with the potatoes because in my experience potatoes turn funky when frozen in soup. Maybe someone has a suggestion for me?

I made this and it was a hit with the hubs. I actually tripled the recipe so we could freeze some for later on this autumn.

I used Bob Evans Kielbasa and fingerling potatoes; and they both really added a lot of flavor to it.
