I also added cream cheese to the mixture and fresh chopped chives. The filling was very flavorful and creamy.
When I baked the potatoes, I put olive oil & kosher salt on the outside for extra flavor.
This will be a staple in my recipe book from now on!

They were a big hit.I used turkey bacon and they tasted great. Next time I want to experiment with the seasoning and try maybe paprika or cayenne…or maybe add some garlic. These potatoes are super easy to make. While the potatoes are baking you can get the rest of your ingredients together. The potatoes are definitely hot out of the over (duh!), so I held them with a towel when scrapping out the filling.
