An excellent combination of spicy flavor in a lighter version of a yummy squash side dish. I did substitute fresh jalapenos from our garden for the serrano pepper, with great results. With all the squash coming in this time of year, this was a very welcomed & exciting change in ways to prepare it. I also liked that it was a more healthy option than a typical squash casserole.
