Yes, you can use brown rice, I do every once in a while…and I use skim milk too sometimes. Note though that you’ll have to probably extend the simmer time. I’ve found brown rice takes a lot longer to cook. Some times if it seems the milk isn’t absorbing all the way I will just take it off the burner, still covered and just let it set for about 15 minutes and it will absorb the milk.

This is a dish that i grew up on. We used brown sugar and cinnamon on top – sometimes a little butter. It also works well with leftover rice, just adding the milk while warming. mmmmm….tastes good anytime of the day.
