I didn’t peel the tomatoes, because I was being lazy, and probably should have.

Also, added some roasted green chilies from my garden and some red pepper flakes because we love spice – great addition!

The most difficult part….peeling the maters! Lovely colorful dish that taste yummy. I served it with Dijon Crusted Chicken Breast posted here by sweetlilpiggy. I added some zucchini simply because I have an abundance of it, as well as squash coming in just now.
