		<description><![CDATA[In this &quot;faux&quot; couscous the grated cauliflower makes a couscous-like texture. It&#039;s low-carb and phenomenal! At the suggestion of my daughter, I used my food processor fitted with the shred blade for the cauliflower and the regular blade for the carrots. It worked great. I substituted dried herbs for the fresh and I think it created a better texture with the other ingredients. I left out the olives (which I dearly LOVE) because my husband does not like them. I used sun-dried tomatoes that came sealed in a plastic pouch instead of jarred in oil. These were great, too, and with the capers it made me almost not miss the olives. I sprinkled a little feta over it when I served it. This is a really great dish! I loved it and will make it again and again.]]></description>
