So we eat roasted veggies every night. However, cauliflower is not generally included because my boyfriend doesn't care for it (texture, I think). I managed to convince him to give the pureed cauliflower a try. I cut up an entire head, sprayed it with cooking spray, seasoned with Trader Joe's South African Smoke blend, and roasted at 400F until soft enough to puree with my immersion blender (with a little added milk and a pat of butter). We had it on the side (with our roasted veggies and salmon) and it was given a thumbs up! Thanks so much for the idea!
