As an aside, I should note 2 considerable deviations from the recipe: First, I used sweet potatoes! I was looking for something savory to do with sweet potatoes and this worked perfectly. The second difference was the substitution of ricotta cheese (I had lots in my fridge thanks to a recent sale) for cottage cheese. I can’t wait to try them again with white potatoes.
