Used the “french fry” cutter on my mandoline (1/4″ cuts) and I’d say this recipe is probably more successful with slightly thicker cut potatoes. Also had a hard time with them sticking to my sheet (used a baking sheet) and would try a little more olive oil next time. Took quite a bit of time under the broiler to get them crispy. Still delicious, just a little more fuss than I had hoped for.
