Best black-eyed peas I've ever had! I made this with smoked turkey sausage instead of the pork and with red pepper flakes. Left out the thyme since I didn't have it on hand.

Wow! These were some of the best black-eyed peas I've had in a long time! They were a huge hit with the entire family.

Just a note: I didn't have fresh thyme so I used dried and added it a little earlier than the recipe calls for. Also I used homemade stock I had in the freezer.

Thanks for the great recipe!

Love it as well! Cooked it yesterday for my daughter and her family and they all (even the two gran girls, 3 & 18 months) loved the Black-eyed Peas. I believe this is a staple for me as those were the best I have ever eaten. The Red Wine Vinegar does make a difference and never heard about the coin for good luck idea but a little extra luck is always good. :-)

I really never liked black-eyed peas, but decided to start the New Year with luck. These are the best I have ever tasted and have removed the "never" to "I really like black-eyed peas!" They turned out absolutely delicious and I will definitely make them again! Thank you SO MUCH for starting my New Year with a lucky and delightful dish.

Excellent! And I'm not a huge BEP fan (but I'm more superstitious, so I eat them every year!), but these are definitely a do-over.

After finishing my second helping (will that make me luckier in the New Year?) I am declaring this the BEST b.e.pea recipe I've ever tasted and if you're a Southerner like me, you've tried plenty! Left out the red onion and red wine vinegar - didn't matter....the thyme addition was divine!
