These were the favorite of the night.

I made a few changes to the recipe though. I cut the potatoes then roasted them with our favorite seasoning. Once just cooked added the rest of the ingredients with the exception of the mayo, I used 1/2 cup mayo and 1/2 cup heavy cream. My boyfriend likes things a bit spicy so I also added some hot sauce to the mix. I then added a couple of tablespoons of cream to the top for extra creaminess.

I will definitely be making these again.

I made these with a few tweaks of my own. First of all, I didn't realize you were supposed to use diced baked potatoes so mine were raw when I made them. I also used uncooked bacon that I chopped. However, my tweak version to make sure everything was cooked was to cover the casserole with foil and bake an hour at 350* and they were delish! So it all worked out in the end. Might even want to bake uncovered the last 10-15 mins to make sure top gets browned, but they were still good.

Bake potatoes first, then cube them. Thanks, kathyingreendale.
Louise, I would use a pound of bacon, cooked until crisp and then crumbled. More bacon than is called for is always a good thing! I was just being lazy by buying the 'bag' of real bacon bits. Thanks!
Joyful joyful ... Thanks!

For those of us not in the US who can't get bags of bacon bits, what size bag would this be so I can sub out ordinary bacon?
