Description

Move over fast food, here come some home-cooked taters that families are going to rave about! Not only are the fries fabulous, but an amazing dipping sauce sits on the side. What? You’ve never had aoili? You need to change that—right now! Aoili is a garlicky, lemony sauce that is oh-so-delish! Enjoy these amazing fries this week to surprise your family.

Ingredients

  • FOR THE FRIES:
  • 2 Tablespoons Salt
  • 1 Tablespoon Sugar
  • 6 cups Water
  • 8  Medium-sized Potatoes, Peeled And Cut Into Your Preferred Size Of Fries
  • Cooking Oil, Enough To Cover The Bottom Of Your Pot Or Skillet
  • FOR THE AOILI DIPPING SAUCE:
  • ½ cups Mayonnaise
  • 4 cloves Minced Garlic
  • 4 Tablespoons Lime Or Lemon Juice
  • Salt To Taste

Preparation

In large bowl, combine salt and sugar. Next, add the six cups of water and stir to combine. Then add the raw fries and let them soak in this mixture for 10 minutes.

Then, place cooking oil in a large skillet and heat on medium-high. When oil becomes hot, add french fries and cook until slightly golden (don’t crowd the pan—do this in batches if needed). Shake excess water from fries before cooking to reduce risk of burns. When they are done to your liking remove them from the oil using a spatula or slotted spoon and drain in a strainer or on paper towels. Repeat until all fries are cooked. Turn down temperature if fries begin to cook too fast. If desired, sprinkle with salt before serving.

For the aoili sauce:

Mix all ingredients in a bowl and chill until ready to serve. Enjoy!
