		<description><![CDATA[Made this tonight and loved it - even my 2-year-old ate all of his!  Made a few modifications/substitutions:  used presoaked blackeyed peas and brown rice, so I threw the peas, 2C of rice and 4C of chicken broth together in a pot and cooked for 40 minutes (until the rice was done).  Meanwhile, I sauteed the onion, 3 old scallions and about 2C of cubed leftover ham in a bit of butter until all were golden.  I stirred together the rice and ham mixtures and served them with hot sauce (so the kiddos could adjust the spice on their own).  Worked out well despite all of my changes.  Thanks for the super recipe.]]></description>
