I buy Sweet Potato spears from Trader Joe&#039;s and normally toss them with Olive oil, Balsamic, garlic, oregano and chopped onion...place them in a foil pouch and bake for 25 minutes.  Tonight I made your oven crispy fries.  I used the convection/microwave instead of the oven so it wouldn&#039;t heat the house up.  They came out great but not real crispy (they were getting dark brown so I didn&#039;t want to cook them any longer.  I did the pre-soak with salt as you suggested also)  I think next time I will either microwave them until tender than finish in the oven to crisp or just go for it and cook in the oven the whole time.  Either way, I will for sure be making these again!
