		<description><![CDATA[I&#039;ve never been a fan of cauliflower - I never found it tasty either cooked or as crudités.  My husband likes cauliflower and as a favor to him, I thought I would give this gratin recipe a try.  Oh my goodness - I absolutely loved it!  Because I was making this on a work night, I thought I would expedite the process and prepare the mashed cauliflower the night before.  It worked beautifully and all I needed to do the next evening was to sauté the onions and garlic, mix it with the mashed cauliflower, top it with cheese and bake it alongside my pork tenderloin.  It was an awesome dinner and I can honestly say the cauliflower gratin was my favorite part!  Thank you for restoring my faith in this noble veggie! :)]]></description>
