		<description><![CDATA[I have made these numerous times with excellent results.  We&#039;ve even had them with dinner.  I cheat &amp; toss the potatoes in the microwave on the potato setting, let them cool and then dice them up.  I&#039;ve even done this a day ahead to speed things up in the morning.  It is super fast.  Everyone loves these and we never have any left-overs.]]></description>

But nevertheless, they were delicious! I also tried a vegetarian version without the bacon which tasted also fine...

		<description><![CDATA[I&#039;ve been struggling to get down the perfect breakfast potatoes for ages. I&#039;m a total fiend for them. I&#039;d have to say that simple taters with some ketchup and hot sauce is my favorite breakfast, hands down, so being unable to get them right myself was super painful. 

Somehow, this dish got it. The bacon grease is vital, I&#039;v eno idea why. Only words of wisdom I have for it is to make sure the potatoes are on the tender side, its better to have them a little more mooshy then a little to hard. Additionally, while rosemary is technically optional in this dish, you just can&#039;t leave it out!  Or you will be a heretic to the great breakfast gods.]]></description>

Maybe it&#039;s the grease, maybe the flour, maybe the iron skillet but whatever it is- it is RIGHT. I took my onions out before adding the taters and also used 1/2 a green pepper.
