		<description><![CDATA[I will use this recipe every time I make Mexican food from now on.  The only thing I might do different next time is use regular canned tomatoes instead of Rotel.  Or just one can of Rotel and one regular because it was too spicy for the kids.  I even forgot to add the cilantro and lime juice at the end and it was still amazing!  Every other time I&#039;ve made Mexican rice it turns out clumpy and mushy... this was so perfect.  Oh... Its really important to let it sit 5-10 min after you pull it out of the oven.]]></description>
