Way too much dressing and the fish sauce overpowered the other flavors. It was also very labor intensive. Overall disappointing.

I’ll try it next time cutting the noodles to make it easier to eat. It was also a lot of work to prepare (cutting prep) and I would do this on a weekend rather than for a weeknight dinner.
