		<description><![CDATA[This is such an impressive salad!  I was a bit hesitant serving it to my husband but he raved about it!  I didn&#039;t have arugula, I subbed romaine and spinach.  Also, I left out the coconut as I didn&#039;t have any that was unsweetened.  II cut the recipe in half and still had leftovers the next day that were even better!  If I were serving this to company, I&#039;d make it the day before with the exception of the greens, I&#039;d combine them shortly before serving.  The flavors and textures create a happy, happy mouth. Make this and impress your friends!]]></description>
