I made this last night for dinner and it was so good that there wasn’t even a lettuce leaf left in the bowl! I used a mesclun mix that had spinach and kale in it instead of straight spinach and kale because I have a few family members that aren’t big kale fans. I also used cherry balsamic vinegar instead of red wine vinegar because my family loves cherries. my vinegar is on the sweet side so I skipped the honey. It was so delicious. I had no idea that cherries and feta liked each other so much! My family has requested that I make this salad again within the next couple of days. It’s that good. Thanks for a great recipe. I’ll be making this recipe every year during fresh cherry season!
