Excellent! I made it exactly as the recipe is written. I’m always a little skeptical about having enough dressing, but this allowed for plenty to coat everything well. Will definitely make again.

I added this to my recipe box quite a while ago and just got around to making it tonight. Why did I wait so long???? It was absolutely delicious, filling yet light, and will be a regular part of my dinner rotation from now on. Thanks so much for sharing.

This was wonderful. The red wine vingar gave it such a great flavor. I only used half the (brown) rice and added an extra can of beans. This is going on the regular menu!!!

Since I first read about this recipe about 6 weeks ago I’ve made it at least 5 times, it’s just that good. I did make a few changes, but I’m sure that it’s just as tasty without them. When I cooked the chicken for the recipe I seasoned it with Frontier’s Adobo seasoning which added another great level of flavor. Since it’s sweet corn season around here, I used local sweet corn instead of canned corn. I shucked the corn, rubbed it lightly with a little olive oil, and cooked on the grill. The fresh corn added a great texture, and a sweetness and smokiness that really complimented the whole dish. This dish is so good that when my son made it and took it to a picnic, there wasn’t a grain of rice left. Thanks for coming up with such an easy, inexpensive and delicious recipe!

This salad is delicious! I added cilantro and tomatoes and used a fresh jalapeno is the dressing. I made this for lunch this week. Thanks for an awesome recipe. I will make over and over.

I made this last night along with PW’s Sour Cream Enchilada’s & it was a HUGE HIT! My four year old daughter was shoveling it in as fast as she could & asking for seconds & thirds. That’s pretty impressive if you ask me! I mean, I knew I’d like it, but kids are harder to please! Great recipe, definitely making this again.
