This is fantastic! I made this just like the recipe except I didn’t add avocado. I thought I had bought them but didn’t. Oops. I used some leftover chicken I had marinated and grilled and a small amount of leftover rotisserie chicken. My family (husband and older kids) absolutely loved it and want it again this week. It made four generous servings though if there had been more, one of my sons wanted seconds.

I fixed this for my Book Club today and all the ladies requested the recipe. It is easy, fresh and a delicious blend of flavors. Definitely a keeper.
