SO GOOD!!!! Loved the roasted golden beets! And the dressing was great over salad greens sprinkled with feta cheese. What a way to get your veggies!

I wasn’t a beet lover until I tried roasting them in the oven. Now I cannot get enough of them! This salad was a wonderful way to enjoy them; a great mix of flavors and textures!

I will definitely try this salad – it has all the things I love most. Another way to use roasted beets is sliced with sliced scallions in a dijon vinaigrette.
