		<description><![CDATA[I made this on Monday. I have been trying to find a recipe that I know I would like for Quinoa that would also be low in calories and fat. This is it and it is mighty tasty. I had it as a main dish on monday night and then had it again ( and it was more flavorful the next day) last night as a side with some fresh grilled salmon. This pairs great with fish. I think it would work incredibly well with a sesame seed seared tuna. 

I only have one edit. I used about 1/3 the amount of parsley. I love parsley but 3 cups seems to be an overkill for my tastebuds. 

Overall, great recipe and so happy I found it!]]></description>
