I haven’t made a lot of egg salad in my lifetime, but this looked so easy, simple, and I love avocado too, so it was perfect. I also happened to have some leftover homemade mayo (my first ever and YUM), so again, it fit great for what I had on hand. Literally just made it and ate and it was wonderful. Thanks for sharing. And as the chef noted, the recipe seems ripe for add-ins for more flavor dimensions if one so chooses. =)
