The dressing is great. Next time I’ll cut the Arugula. The leafs are big and make it awkward to chew. A quick little chop will make it easier to eat, even if it’s not as pretty. The mint is a nice touch – like the Feta too but I’m sure it would taste well without also. Will make this again!
