So much room to alter the spiciness, and so incredibly easy, I love making them because you’re right- my handsome guy just adores them! Buying a rotisserie chicken is not only the easiest, I like that there’s a little flavor in it too, instead of just boiling your own. Plus, I’m all for laziness.

They were mild enough with the mild Rotel tomatoes that many of the kids liked them, too. I used a BBQ Rotisserie chicken from the grocery store, plus I sprinkled a little smoked paprika on the top, so it had a very slight smoky taste overall, which was good. Next time, I might try the spicy Rotel tomatoes for myself…I like a little kick. Thanks for sharing this recipe!!! It’s a keeper!
