The only modifications I made were to use canned tuna (you’ll need two), leave out the jalapenos, and use wheat sandwich bread instead of english muffins. I made the whole recipe and I think I got eight tuna melts out of it. It keeps really well in the fridge, so this would be a great recipe to bring to work (assuming you have a toaster oven and a forgiving office).
I’m definitely going to make this again soon!

I didn’t have a jalapeno, but since the boyfriend favors Kraft’s spicy mayo, I just substituted that. Didn’t have the gherkins either so I used a couple spoons of sweet relish. I also added about a tbsp of capers chopped….salty goodness.
