I made the mistake of making it with 2lbs of ground beef and when I finally realized I added 2lbs instead of one, I had to add a dash of milk to moisten it. Even though I added 2lbs of meat, I didn’t double the other ingredients, and it still came out SOOOOO good! I also didn’t add the marinara sauce, I did ketchup, mustard and a sprinkle of brown sugar instead. :)

The balsamic vinegar is what pushes it over the edge for me. It gave the meatloaf such an interesting and unexpected flavor.

Rather than using marinara sauce, I made a spicy ketchup to go on the side (personal preference).

I did have some minor trouble with the meatloaf sticking to the lined and oiled baking sheet. I might try a broiler pan next time.

I plan to make this again and again. Yum!
