The pork was tender and juicy with a sweetness from the brown sugar and apple and a little bit of zest from the onion. It was absolutely delightful. Because I was only cooking for 2.5 I used just one onion (half red, half yellow) and I didn’t have any granny smith apples on hand and used a gala instead (and only used 1/2 TBSP to compensate for the apple’s sweetness). Served it with sour cream mashed potatoes and steamed asparagus. Both DH and I were licking our plates clean!
