Instead of stuffing the breast after cutting it in the middle, I flattened the breast then put the cheese in the center and rolled it. This seemed a bit easier than stuffing it. No cheese leaked out because I wrapped the bacon around really tightly and baked it instead of barbecuing. Very tasty!
