I've halved this recipe successfully twice. I usually keep the amount of spinach the same, actually. Just make sure you're using a bowl big enough for all of the hot items (pasta, sausage + tomatoes) to fully wilt the spinach. It is really delicious, and healthy too with 4 food groups and a green vegetable!

made this one tonight. i had to put it in 2 9x13s! i'm not really sure how this happened??! anyway, i was worried that the ratios would all be wacked, but no! it was really good.
i recommend browning the sausage really well (the turkey works great because there is hardly any fat, so no draining) @ a higher heat. that way when you add the canned tomatoes, their juice causes all of the browned bits @ the bottom of the pan to loosen & become part of the sauce - super tasty.
& oh yes, i did add more cheese :)
this is a PERFECT (healthy) winter food.

I made this the night before I served it at an after-church meal -- I really wish I could've tested it fresh out of the oven. It was pretty tasty the day after, although a touch dry. Tasty, but not unforgettable. I imagine it would have been even better hot out of the oven, but I also think I'd up the sauce and cheese amounts a bit. Thanks for the recipe!

Delicious! As I mentioned in the comments, I add baby portabellas to the recipe, and I haven't been able to find the Jenny-O Italian turkey sausage, so I get whatever Italian sausage I can find. Otherwise I pretty much follow the recipe, and it's turned out amazing every time I've made it!

This is great! I have made it many times. I use diced tomatoes with oregano & basil already included & I add the mushrooms at the same time as the tomatoes. Thanks for sharing this fantastic recipe.

This was great! I made this last night for dinner and my whole family voted it a keeper! I used diced tomatoes with oregano & basil already included & I added the mushrooms at the same time as the tomatoes. I am sure I used more cheese than was called for in the ingredients but, you've got to love extra cheese! Thanks for sharing this fantastic recipe!
