I ‘carmelized’ the onions so they cooked the whole time the lentils were cooking. I had shredded cheddar cheese as an option for a topping when I served it and everyone had some & agreed it completed the dish. This was the perfect side-dish for the beer-boiled-then-grilled brats my son made. This has been added to my ‘recipe box’ and I’ll be making it again!!
