I wish I had doubled the recipe too. Everyone had to have more. It is refreshing and there are so many flavors to this dish. I think I would even make the rice to go with other dinners. The marinade was fantastic. I added some dried oregano to the marinade and I doubled it so we’d have left overs. I’m soooo glad I did!! I added a little mint and some feta to the tzatziki. Very fresh and delicious summer meal. My husband loved it!
