Reminded me of “down on the farm” when we had steak regularly. However, how do I keep the sauce from curdling? I exceeded the temp for about 20 minutes because of something else in the oven. I ended up needing to bake it longer than 45 minutes to get the meat nice and tender, but maybe I just had a tougher cut of meat. I also had a bit of separation with the sour cream–it still tasted delicious, just wasn’t as pretty. I might try adding the sour cream later on in the recipe.
