Would try again but it needs something like chicken in it to give it some substance and not just be a mushy mess. Sour cream seperated and did not meld nicely with the cheddar.

The enchiladas were lacking in flavor, the cayenne did not help much, this recipe needs a kick in the pants. I loved the way you fried the tortillas and diped them in the enchilada sauce. I will try more of your recipes in the future, I am sure they will be great!!!!!!!!!
